A few weekends ago, I sat down to plan our weekly menu as I always do on Sundays, and decided it was time to search the web for some brand new recipes. Peanut Ginger Chicken Quinoa Salad
One of my favorite salads at one of the local eateries is an Asian Chicken Salad, and one of the staple household items in our kitchen is quinoa, a protein packed and low fat wonder grain. This fusion of the two is coming from Katelyn of Ambrosia & Nectar, who crafted this recipe during one of those “raid-the-fridge-to-not-waste-produce” evenings. I’m glad she did, this salad is healthy and delicious at the same time.
Jaclyn of Cooking Classy is the author of this Taco Soup and says “If you like chili you will love this soup! It tastes very similar to chili, but it’s more of a loaded chili. It is so hearty and filling and thanks to all the beef and beans, it’s loaded with protein.” In order to keep a serving under 400 calories as the post title promises, I used ground turkey instead of ground beef in our batch of Taco Soup. Not only does this meal cook up in less than 40 min, you’ll have leftovers on your hands as well. Fantastic!
Fancy Friday here we come! Friday is a tricky evening to put together at times. The workweek is over and you’re ready to welcome the weekend with a bang. Then 5:30 rolls around and you shut down the computer at the office and you head for home. All of a sudden, you are exhausted and the thought of that weekend kickoff sounds like a less great idea than it did this morning.
